Protein baked pancakes

A balanced, high protein breakfast that keeps you full, fuels your energy, supports digestion and nourishes your body with essential nutrients. This feels like a real treat for breakfast and my kids absolutely love this one as you can imagine. Especially as you can swap around the filling choices. The blueberry and banana option is slightly less calories but pretty much the same with protein and fibre. You can leave these to completely cool and keep in the fridge for up to 3 days. Eat cold or reheat in the microwave for 1 minute.

Step 1

In an oven proof dish mix together egg, flour, baking powder, protein powder (I used vanilla for extra flavour) and milk. Once that's fully mixed, add your filling choice.
