Sweet potato red lentil dhal

It's very healthy, high fibre, vegan and so comforting. I like to make a batch of this so I can have it for lunch the next day too.

Heat a little oil in a pan and add the chopped red onion. Once softened add garlic, ginger and the spices. Add the chopped sweet potato and stir until it's all nicely coated.
